Chicken loaf

Hi everyone,

With summer around the corner, we'd all like to have nice quick and tasty meals to have whether hot or cold. So I put this recipe together and yes it was great, it turned out better than expected.

Here goes....

CHICKEN LOAF

500g chicken mince
150g fetta cheese - crumbled
1 egg
1cup quick oats
3tea sugar (raw) but if u dont hve white is just as good
1 tea salt
splash port
splash whorchestshire sauce
chilli flakes

lastely I added a teaspoon of dukkah a seasoning of sesame seed, cumin, coriander, sumac and almond . This is only if you wanted a middle eastern taste, but other flavours work just as well.

NB you might be able to find this in the supermarket or look for it in your local delicatessan.

Now the easy part, just add all the ingredients in a bowl and mix well.

Made a gully down the middle of the loaf afterthe meats being put into the loaf tin and put tomato sauce on. Gently cover the tomato sauce with the chicken mix.

I used a loaf tin lined with baking paper which helped keep the juices from being dried up while the loaf was cooking and being able to spoon it back over the meat afterwards. lol makes for easy cleaning too.

Bake in a pre-heated oven set around 200 degress for about 45 to 50 minutes.

Served my chicken with steam vegies.

Enjoy!!!!!
