Hey Everyone,

Hope you all enjoyed the sunny day we had today.

With nights getting cooler, nothing better than a nice hot chicken soup.
You need about 1kg of chicken (skinless thigh with bones is best or a whole chicken - remove some of the fat and skin), 1 to 11/2 water, carrots , celery, and any other veg you want, salt, sugar and pepper. Bring the water to a boil and add the chicken with seasoning. Scope the impurities off the surface. Boil for about 1/2 hour before adding the carrots and other vegies. Boil for about another 1/2 hour. Check the soup is to your liking. Can add extra seasoning if needed.

This really goes well with the chicken soup
Garlic and ginger condiment.
Dice about 3 to 4 Tbsp garlic and ginger finely, add about 1 plus tsp salt. Heat 3Tbsp of oil till just about smoking and pour onto ginger and garlic placed in a china bowl. NB PLEASE BE VERY CAREFUL WHEN POURING OIL .

Serve it with steamed rice.
